Pecan Pie Cookies

Pecan pie in a special thumbprint cookie! Get all of the rich flavors of pecan pie in these bite size pecan pie cookies. Great for a holiday cookie assortment!

1 cup firmly packed brown sugar
3/4 cup Land O Lakes® Butter, softened
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder


1 cup chopped pecans
1/2 cup firmly packed brown sugar
1 teaspoon vanilla


Heat oven to 350°F.

Combine all cookie ingredients except flour and baking powder in bowl. Beat at medium speed until creamy. Add flour and baking powder; beat at low speed until well mixed.

Shape dough into 1 1/4-inch balls. Place 2 inches apart onto ungreased cookie sheets. Make indentation in each cookie with thumb; rotate thumb to hollow out slightly

Combine all filling ingredients in bowl; fill each cookie with 1 rounded teaspoon filling. Bake 8-12 minutes or until lightly browned. Cool 1 minute on cookie sheets; remove to cooling rack.

Recipe Tip

These cookies can be made ahead and stored in the freezer up to 3 months. Place cookies in containers with tight-fitting lids, separating layers with waxed paper.

DELICIOUS! I forgot to chill my dough first, but mine came out perfect. I always like to follow a recipe exactly the first time, but I think I'd like to try it with the melted butter as one person commented rather than the cream just for comparison. Excellent cookies.
So delicious! I love that the liquid of the topping soaks in, leaving, like the best part of pecan pie! Using a standard cookie scoop gave me exactly 24 cookies, so bigger than a typical thumbprint cookie. Be careful not to make your thumbprint too deep, or the bottom becomes more filling than cookie and falls apart - still delicious, but not exactly what you're going for! They do spread a fair bit while baking, so space accordingly. I love the idea of making these in mini muffin tins, that should help both the size and the falling apart, too! If you even kind of like pecan pies, try this recipe, it's really great.

I saw this receipe and I knew immediatly I had to make them! I know my son will love then cause he loves Pecan Pie! I'm going to surprise him.

I made these cookies for Easter, and my family went crazy over them. I have been receiving nonstop requests to make more. I'm thinking this weekend.
I made these cookies, I made the cookies too big but the family loved them... I have requests to make again.. Soon...
Mine spread out to thin when baking. I think I should have chilled the dough for awhile, or maybe my butter was too soft. Taste good though! I would make them again.

awesome cookies!! Will be making lots more of them. Followed the recipe and they came out perfect...
I made these for a cookie exchange and they were the first to go. I didn't have any cream for the filling so I used 2% milk and it came out great. Also, on the filling, I combined the sugar, milk and vanilla and microwaved it for about two minutes to melt the sugar, then I added the nuts and put the mixture in the freezer for about 10 minutes to cool down. I doubled the recipe and it made just under 4 dozen with a normal cookie scoop.
These came out perfect, but instead of heavy cream for the topping I melted butter in a nonstick pan with the brown sugar, vanilla and tossed in the pecans. The topping came out sticky and chewy just like the top of pecan pie. I'll be making these again.
I LOVE these cookies. They are always a big hit whenever I make them. Instead of making them as a thumbprint cookie; I place the balls in a mini muffin pan, make an indention and then add the filing. I usually make double the filling as the cookies will hold more in the pans. FABULOUS!
Super easy and delicious recipe. I made several batched this afternoon with the help of my 10 and 11 year old daughters. My son who claims to hate pecans even said they tasted like heaven. Can't wait to see how the ladies at the cookie exchange like them!

I haven't made these yet but I had a question... Do i use heavy whipping cream without whipping it or do i need to whip it?
I loved these. I did not use Land O'Lakes products but they turned out great.
I would give this recipe zero stars if I could!!!! I did exactly what the recipe said and the batter was way too sticky and thin to make a ball or anything other than a mess! It was awful! I tried adding flower, tried letting it sit in the fridge and the dough never thickened to a consistency you could make a ball with. Horrible recipe.

Hi Maggie, I'm sorry to hear you had trouble with this recipe! If your batter is too sticky, there is a chance your butter could have gotten too soft. It's important to use softened (but not too soft) butter. Hopefully you'll give this recipe another chance.

I've made these a few times, and they are always delicious!
Reading the ingredients made my mouth water. Absolutely! The best. I made one adjustment--I mixed 2 tablespoons of maple syrup and 1tbs almond in the batter. And I reduced the 1/2 cup brown sugar by 2 tablespoons. My clinic raved about those cookies. I love them and they will be part of my Christmas treats forever. Even without the adjustments, I know these cookies would be the "talk of the party". I did not use the Land of Lake products. Brie
This is a hit every time I make it!! Very easy to make and well liked by all!!
I make the normal pecan pie recipe but had ago at the gluten free not good couldn't get hem out of the muffin tins did chill for 30min as suggested will give it ago again.
Everyone who has eaten these cookies when I made them, loved them! I chill the dough and make them into mini pies using a mini cupcake pan! And i used generic ingredients also!
Best cookies EV-AH! A couple of tips, though: add a tsp off cinnamon to the dough, and chill the dough. These cookies spread a lot, so make them tall and round with deep wells into which you put the filling.

And this will come as a huge shocker, but I used an off-brand butter and egg... and they turned out just as good (and the Land O Lakes folks may now delete this post for blasphemy against their brand).
I think these were the most tasteless cookies I have ever made in my 68 years. I used the best ingredients & L of Lakes butter. They were flat and just weren't good. The recipe should say to chill
the dough, etc. to have better results. I was going to try these for a 4-H cookoff in the Spring to help
my Granddaughter. Sorry, after 1 cookie sheet of them, the dough, etc. went into the trash. A waste of time & money. PS, BUT, I always use Land of Lakes products - and will continue!!
I make very similar cookies every year, slightly different by a couple of ingredients. They are always delicious. A suggestion to make them more like a 'pie' is to make a 1 inch ball of dough in your hand and then shape/sqwish the dough like a pie crust in each mini muffin cup in the pan. Fill each cup with the filling. delish :)
i just made these for the first time. The first batch, I made too big- they were much better when I made them smaller. I don't really get the comparison to pecan pie- to me, they were much more reminiscent of pecan sandies. I happen to love pecan sandies, so they worked for me.
What happened? The cookies had very little flavor and attracted zero interest at a cookie exchange. The ingredients were all of very high quality. The pecans were individually very tasty, the butter- Land O'Lakes, and fresh everything else. The vanilla was extremely high quality to the point it was a little too pronounced. Otherwise, it simply didn't taste like much of anything, much less pecan pie. Recipe was followed explicitely and the finished cookies looked exactly like the picture above. My experience doesn't square with all the positive comments. What did I do wrong???
These cookies were quite a hit at church and were delicious- but they did flatten out. Any suggestions on how to make them so they con't flatten out?

One of the most important reasons the cookies flatten out is if the butter is too soft when used in the cookie dough. I even suggest chilling the dough for about 30 minutes before forming the dough into the cookies.

This is a wonderufl recipe and one of the favorites of everyone! The cookie itself is just delightful, so buttery, it really does taste like a pecan pie.
My cookies also flattened, but were absolutely fantastic! Who cares what shape they are?

Pecan pie cookies
I found this recipe for Pecan Pie cookies in a Land O Lakes butter wrapper a few years back. It is very easy and has become a Christmas tradition - making these cookies for our neighbors. (one of the few times my wife let's me in the kitchen to cook something). Easy - Enjoyable - Brings smiles to all!
I have not made these yet but I am planning to. I wonder what size egg to use? Any suggestions from Land O Lakes or bakers who have had successful results (not too flat)?
I was real careful NOT to let my butter sit to long and chilled the shaped but not filled cookies for about 15 minutes and these still flattened out when baking. I will need to adjust the recipe next time. These did however taste wonderful!
Delicious and easy to make cookie. Definitely will curb a craving for pecan pie. Others have commented on having their cookies turn out large and flat. My first batch turned out that way as well. To me, 1 1/4 inch ball of dough is close to a golf ball size. Problem solved when I cut that golf ball size dough ball in half which made a nice 2 1/2 inch diameter cookie. This recipe goes into my favorites and I am looking forward to testing...and tasting... another Land O Lakes recipe!
I usually make this with 2 eggs so that the cookie dough isn't as dry & crumbly. I also add 1 tsp of maple extract for added flavor. These are a HUGE hit at my house!!

It is very important that you do not let the butter in the recipe get too soft. If the butter stands at room temperature for about 15 to 20 minutes the butter is soft enough to mix the cookie batter. Using butter that is too soft makes cookies spread out and get flat.
I made these cookies for the first time and converted them to gluten free- they turned out perfect! Great recipe!
these were great. my only problem was trying to make a big enough indentation in the middle in order to put the pecan filling in without making the cookie lose its nice round shap on the sides like the photo shows. Maybe the cookie dough needed to be chilled first?
The cookies are delish...HOWever instead of being as pictured mine turned out to be 4" pancakes! Help, please for next year's baking marathon.

This was a great recipe. I made them for christmas last year for family and friends and everone loved them. In fact I am getting ready to bake some up right now, my family is expecting them again this year! They are a bit time consuming but certainly worth it.

Everyone i have made these cookies for absolutely loves them!!! They always beg me for the recipe. I suggest toating the pecans @ 350 degrees for about 6 min before adding them to the filling mix. I like to put a whole pecan on the top of the cookies before baking for a lil added appeal (it also makes them more tasty!)

These have an okay flavor, but mine also turned out flat. Perhaps making them in a mini-muffin tin would help. But, I will not be making them again.

I loved this recipe. It was super easy to make and turned out delicious. I was afraid it was going to be too sweet but it was perfect, it really does make you think of little pecan pies. Sooo good! This one's going to be a regular for the holidays!
Easy to make and everyone loved them. It is to hard to make the cookies small and get lots of good filling in them so don;t worry about the size. Make a little extra filling then they say. Or just make a double batch, they will be eaten!

Taste may be great...but cookie turned out flat.... what could have gone wrong? I even chilled the dough cause it was too soft to form into a ball.... This would never replace the pecanettes I make in mini muffin tins...
