I found this recipe this past Christmas in an old booklet that I've had for years. I'm not a fan of citrus desserts but my husband picked it as the cookie he wanted me to make for him to take to work and share. These cookies have gotten the most positive feedback of any cookies I've ever made. They were gone in one day and I ended up making more later in the season. One of his co-workers said he couldn't wait until next Christmas so he could have these cookies again. They soften up overnight after being filled so be sure to make them a day ahead; otherwise, they are too crunchy. I adjusted a bit and put orange zest in the filling as well by cutting down on the lemon to accommodate.
I detest cut-out cookies, they usually are not worth the trouble! But these cookies are worth the time and effort! So refreshing and yummy!
