Turtle Thumbprints

Thumbprint cookies just like the famous candy--pecans, caramel and chocolate team up in this bite-sized cookie.

2/3 cup Land O Lakes® Butter, softened
1/2 cup sugar
1 teaspoon vanilla
1 1/2 cups all-purpose flour


20 caramels, unwrapped
48 pecan halves


1/2 cup real semi-sweet chocolate chips
2 teaspoons shortening


Combine butter, sugar, egg yolks and vanilla in bowl. Beat at medium speed until creamy. Add flour; beat at low speed until well mixed. Cover; refrigerate at least 1 hour until firm.

Heat oven to 375°F.

Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Make indentation in center of each cookie with thumb. (Edges may crack slightly.) Bake 7-10 minutes or until edges begin to brown. Cool completely. Store cookies in a container with a tight-fitting lid for 2-3 days or freeze for up to 2 months.

Combine caramels and whipping cream in bowl, at serving time. Microwave 1 minute; stir. Continue microwaving 1 minute or until melted; stir until smooth. Spoon about 1/2 teaspoon caramel mixture into center of each cookie. Top with pecan half.

Place chocolate chips and shortening in bowl. Microwave 1 minute; stir. Continue microwaving 30 seconds or until melted; stir until smooth. Drizzle over cookies. Let stand 2 hours or until set.

Recipe Tip

- To store drizzled cookies, place in container with tight-fitting lid. Store at room temperature 1-2 days or freeze for up to 2 months.

- Place cookies on a cooling rack over a piece of waxed paper to catch any extra chocolate drizzle.

- If caramel filling gets too thick, reheat in microwave 10-15 seconds until it becomes spoonable again.

The Turtle Thumbprints are the cookies my family and friends ask for every year at Christmas time. Me and my entire family love them. The dough is easy to make and work with. The caramel filling is excellent and simple to make to. I hand pick each pecan halve to place on the caramel filling and then drizzle with chocolate. This cookie taste excellent! I suggest you try it.
These are one of the best cookies.
When making the cookie itself I formed the cookie.
When using the ball shape doesn't make a nice edge, so I formed them myself.
A keeper for sure!!!
Made these for a cookie swap. Everyone really liked them a lot. Making another batch tonight for the family. They are "pretty" and taste yummy.
Can I freeze the finished cookie - after adding the caramel and pecan??

I suggest you freeze the cookie portion after baking and then add the caramel and pecan after you thaw the cookie. The cookie surface under the caramel may become slightly soggy after freezing if you top the cookie with the caramel before freezing.

I call these my showstopper cookies! Not very much work, but they are stunners. This recipe has become a family favorite. It's also easy to adapt to make a no-nut alternative. Leave for 2 days - then the butter comes out in the shortbread. Mmmmm!
