This vegetable soup recipe uses creamed spinach to create a light and creamy base.
Combine all ingredients in slow cooker except creamed spinach and cheese.
Cover; cook on Low heat setting for 8 to 10 hours or until carrots and potatoes are tender.
Increase heat setting to High. Stir thawed spinach into hot soup mixture, stirring constantly. Cook, stirring occasionally, until soup is thickened (6 to 10 minutes).
To serve, spoon into individual serving bowls; sprinkle with cheese.

I've been making this soup from tis recipe for years. Its one of my favorites. The flavors all mix together so well and its very easy to prepare. I make it on stove top or on crcck pot. Its the perfect comfort food for a cold chilly night.
It just turned fall like on the east coast and I was feeling a need to make soup, and found this recipe.I made this seven vegetable soup in my crock pot....Wow it was delicios. Loved the mix of vegetables and the spinach at the end...was great. I will make it again!!!

I just made this soup today for the first time! Hubby came home from ice fishing & we had this, along with the Honey Moist Cornbread, and we both agree it's a "keeper"!! I doubled everything except the spinach, & couldn't find the zesty tomato sauce, so used a jar of chunky spg. sauce instead, & it was absolutely wonderful!! And the cornbread was also excellent!! Thankyou LOL for 2 more great recipies for my collection!!
I made this soup this past winter for a "soup carry in" at work. Took none home. I made it in the heat of the summer also; decreased the potatoes and used zucchini squash that needed to be used. Just added it toward the end of cooking time. Very easy and tasty recipe!
