Creamy Chocolate Cookie Pie

Serve this rich and creamy pie, made with Dairy Ease® 100% Lactose Free Reduced Fat Milk, for a great treat after dinner. It will become a family favorite!

Ingredients

Crust

1 3/4 cups (about 20) crushed chocolate sandwich cookies
1/4 cup Land O Lakes® Butter, melted

Filling

1 (1-ounce) square semi-sweet baking chocolate
1 (5-ounce) package chocolate cook and serve pudding and pie filling mix
3 cups Dairy Ease® 100% Lactose Free Reduced Fat Milk*
6 chocolate sandwich cookies, quartered
1/4 teaspoon vanilla

Garnish

1 cup non-dairy whipped topping

Directions

Combine 1 1/2 cups cookie crumbs and butter in small bowl; mix well. Press evenly onto bottom and up sides of ungreased 8- or 9-inch pie pan. Set aside.

Melt chocolate in 2-quart saucepan over low heat (1 minute). Stir in pudding mix and milk with wire whisk. Increase heat to medium. Cook, stirring constantly, until mixture comes to a full boil (10 to 12 minutes). Remove from heat; stir in cookies and vanilla. Pour into prepared crust. Cover; refrigerate until set (3 to 4 hours).

To serve, dollop individual servings with 2 tablespoons whipped topping. Garnish with remaining cookie crumbs.

*Substitute Dairy Ease® 100% Lactose Free Whole Milk or Fat Free Milk.
