1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon freshly grated lemon zest
3/4 cup sugar
1/2 cup milk
1 cup fresh blueberries*
1/4 cup firmly packed brown sugar
1 tablespoon milk
1/2 cup sweetened flaked coconut
1/2 cup whipping cream, whipped, sweetened
- If cake becomes cool before serving, place in 325°F. oven for 5 to 7 minutes or until warm.
- Always check the expiration date on the bottom of the baking powder can, especially if it hasn’t been used for awhile.
