Becky's Butter Cake

Butter cake recipe reminiscent of the 1-2-3-4 cake that Grandma may have baked. The numbers refer to ingredient amounts.

Ingredients

Cake

3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups sugar
1 cup Land O Lakes® Butter, softened
2 teaspoons vanilla
1 cup milk

Frosting

1/2 cup Land O Lakes® Butter, softened
3 (1-ounce) squares unsweetened baking chocolate, melted, cooled
4 cups powdered sugar
1/4 cup milk
2 teaspoons vanilla
Decorator sprinkles, if desired

Directions

Heat oven to 350°F. Grease 13x9-inch baking pan; set aside.

Combine flour, baking powder and salt in bowl. Set aside.

Beat sugar and 1 cup butter in bowl at medium speed, scraping bowl occasionally, until creamy. Add eggs, 2 at a time, beating well after each addition. Add 2 teaspoons vanilla. Add flour mixture alternately with 1 cup milk, beating at low speed after each addition.

Pour batter into prepared pan. Bake 45-55 minutes or until toothpick inserted in center comes out clean. Cool completely.

Beat 1/2 cup butter and cooled chocolate in bowl at medium speed until creamy. Gradually add powdered sugar, alternately with 1/4 cup milk and 2 teaspoons vanilla and scraping bowl occasionally, until well mixed. Frost cooled cake. Sprinkle with decorator sprinkles, if desired.

Recipe Tip

- Add 1 to 2 tablespoons additional milk to frosting for desired spreading consistency.

- This cake is very versatile. Frost the cake or, leave unfrosted and top each serving with sliced strawberries and whipped cream.

Hi, I've already tried the recipe. However, I had a problem preparing the frosting. Does it need to be heated? because mine has undissolved sugars and it was not as dark in colour as yours. What is the problem here, may I ask? Because I've added more chocolate than needed actually. But it still does not achieve the dark colour of the frosting.

The chocolate frosting is the color of milk chcolate and is not real dark in color. The butter is softened and mixed with cooled melted chocolate. Then you add powdered sugar and beat it until well mixed. It should not have a grainy texture if powdered sugar is used.

I love this recipe. definitely the best butter cake recipe I've ever tried. and definitely better than cake mix.

I really like this recipe! I used it for my Marble Cupcakes and they turned out wonderful! They tasted like heaven!<3 I'm planning to bring it to a Spanish party tomorrow at school! :)

I made this recipe a little over a year ago, and I simply loved it. Today is my grandaughters birthday and I want her to enjoy this cake with the family. This cake is delicious!
This is a quick, easy recipe and oh my it is delicious. My son asks for this cake every year for his birthday and I have given the recipe to him so he can make this cake anytime he likes. And it is great with your favorite chocolate frosting and oh yes a scoop of vanilla ice cream it the best!!
