Chocolate-Topped Toffee

Holiday desserts like this toffee recipe finish off a special meal in sweet style. This butter toffee topped with chocolate is a holiday favorite.

1 cup sugar
1/4 cup water
1/2 teaspoon salt
1 teaspoon vanilla
1 cup real semi-sweet chocolate chips


Butter 13x9-inch baking pan; set aside.

Combine butter, sugar, water and salt in heavy 2-quart saucepan. Cook over medium heat, stirring constantly, 7-9 minutes or until mixture comes to a full boil. Continue cooking, stirring occasionally, 18-22 minutes or until candy thermometer reaches 300°F or small amount of mixture dropped into ice water forms a hard brittle strand. Remove from heat; stir in vanilla.

Pour mixture onto prepared pan; spread to cover bottom of pan. Sprinkle chocolate chips over hot candy; let stand 5 minutes. Spread melted chocolate evenly over candy.

Cool completely; break into pieces.

I've been making this "English Toffee" for over 30 years. Every Christmas, family and friends receive a container in a pretty Christmas plate or bowl! They all love it! This version is slightly different than the one I received in 1980 but it is absolutely delicious and one of my family's favorites!
Toffee received raves at our family Christmas party. Several wanted the recipe.
I've been making this for years but living in the deep South, I have to wait for cooler days when the humidity here is low. Today is one of those days and I can hardly wait till it's cooled. This recipe is a treasure.
I made this toffee 2 Christmas's ago when I needed an extra touch for cookie gifts. Now it's a part of my holiday baking. This is sooooo easy and is absolutely delicious. Everybody raves about the delicious buttery taste plus can't imagine that I could be making candy and having it turn out so good. When I took some into work, one guy said "will you make me a batch, I can't get enough of it". A great recipe for people in a hurry!
this is a family favorite at Christmastime. it seemed to take longer than the recipe indicated for the candy mixture to reach the hard brittle stage. sometimes i will add some crushed nuts to the chocolate topping as an added treat.
