Bake these apricot and spice muffins from a convenient homemade muffin mix you previously mixed and stored.
Heat oven to 425°F. Place paper baking cups into 12-cup muffin pan or grease and flour cups. Set aside.
Combine all muffin ingredients
apricots in bowl; stir just until moistened. Gently stir in dried apricots. Spoon batter evenly into prepared pan.
Combine all topping ingredients in bowl; sprinkle evenly over batter. Bake 17-20 minutes or until lightly browned. Let stand 5 minutes; remove from pan.

Made the mix and then some muffins! Went to get my dried apricots and remembered I had given them to my daughter, so substituted cut dried cherries! Those served the purpose very well and the mix will come in handy again. By the way,I shared the recipe with her!
The muffins are fast and easy to make. Especially if you've previously made the oatmeal muffin mix and have it on hand. Leftover muffins remained moist even after reheating them the next morning. I will be making them again, but next time I will double the amount of apricots. While they were very good, I could barely taste the apricots over the cardamom.
