2 1/2 cups prepared Oatmeal Muffin Mix (see below)
1 teaspoon ground cardamom*
1/2 cup finely chopped dried apricots
3 tablespoons firmly packed brown sugar
1/3 cup chopped walnuts, almonds or pecans
1/2 teaspoon ground cardamom**
- If using 2 1/2x1 1/8-inch muffin pan cups, yield will be 15 muffins.
- Cardamom is a member of the ginger family and has a spicy sweet flavor. If you don’t have cardamom on hand, ground cinnamon can be used in its place.
