Easy Lemon Bars

The flavor of lemon really comes through in these bars.

2 cups all-purpose flour
1 cup Land O Lakes® Butter, softened
1/2 cup powdered sugar


1 1/2 cups sugar
1/4 cup fresh lemon juice
1/4 cup all-purpose flour
2 to 3 teaspoons freshly grated lemon zest
1 teaspoon baking powder


Powdered sugar


Heat oven to 350°F.

Combine all crust ingredients in large bowl. Beat at low speed until mixture resembles coarse crumbs. Press mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 20-22 minutes or until light brown; remove from oven.

Combine all filling ingredients in bowl. Beat at medium speed until well mixed. Pour lemon mixture evenly over hot, partially baked crust.

Continue baking 15-20 minutes or until filling is set and bars are light brown around edges. Cool completely.

Sprinkle bars with powdered sugar. Cut into bars.

Recipe Tip

For easy cutting, line pan with parchment paper, extending paper over edges of pan. Prepare bars as directed. Completely cool bars. Lift bars out of pan using paper ends; cut bars on cutting board.

I LOVE lemon bars, and normally recipes titled "easy" mean mediocre. This was definitely not the case for these lemon bars! They are very easy to make and turned out delish. The crust is perfectly crisp with the right crumble, and the top part is tart yet sweet with a strong lemon flavor. I served them cut up with a slice of fresh strawberry on top for a small get together with friends. They devoured the bars! Make them!
I made this for my son's grooms dinner and the entire group raved about how wonderful they were. I was happy to share they were not boxed mix but from Land O'Lakes recipe site.
Pretty good, sort of like a Lemon Meringue Pie flavor.
