Irish Cream Mousse Bites

This light and flavorful mousse is a delicate dessert to serve to your guests.

Ingredients

Crust

2 cups (about 24) crushed chocolate sandwich cookies
1/3 cup LAND O LAKES® Butter, melted

Mousse

1/2 cup milk
1 (.25-ounce) package unflavored gelatin
1/3 cup sugar
3 tablespoons Irish cream liqueur*
1/2 cup whipping cream
Chocolate shavings

Directions

Heat oven to 350°F. Combine all crust ingredients in medium bowl; mix well. Press into ungreased 8-inch square baking pan. Bake for 8 to 10 minutes or until crust is set. Cool completely.

Meanwhile, place 1/4 cup milk in 1-quart saucepan; sprinkle with gelatin. Let stand 5 minutes. Add sugar and remaining milk. Cook over low heat, stirring occasionally, until sugar is dissolved (4 to 6 minutes). Remove from heat; stir in liqueur. Let set until cool (20 minutes).

Beat whipping cream in medium bowl until stiff peaks form. Gently stir cooled liquid gelatin mixture into whipped cream until smooth. Pour over cooled crust. Refrigerate until set (at least 1 hour).

To serve, cut into small bars; place in mini paper or foil cups, if desired. Garnish top of each bar with chocolate shavings.

*Substitute 3 tablespoons Irish cream flavored coffee syrup or 2 tablespoons cold coffee and 1 teaspoon almond extract.

I have brought these to several gatherings where people raved about them and wanted the recipe. I do find that Bailey's gives better flavor than other brands.
This certainly looked pretty, but the flavors were somewhat bland. Friends commented that this was "not one of your best".
