I liked this cookie, but I agree it needs a little more flavor. I put a few drops of almond extract in the icing and it "perked" it up. I also think the icing could be made with raspberry jam and would be a little more flavorful.
Tried this cooky over the holidays. I am giving it three stars because it just seemed like it needed something. The cooky was good, but I think the icing needs more flavor. Possibly more apricot jam ?
2008 is the second year that I have made this recipe because I receive so many compliments from my family and friends. It is easy, quick, and is so yummy!!
They were delicious. I made them for my son and his kids and they were gone in a flash. I made some with vanilla extract, some with almond. Both were good.
This recipe was a hit! I baked these and took them to work and everyone loved them. The cookies melt in your mouth and are very flaky, and the apricot glaze adds just the right touch of sweetness. I will definitely bake these for my family at Christmas.
