This moist gingerbread is flavored with molasses and pumpkin pie spice.
Heat oven to 350°F. Grease 15x10x1-inch baking pan; set aside.
Combine sugar and margarine in bowl. Beat at medium speed, scraping bowl often, until creamy. Add water, molasses and eggs; continue beating until well mixed. Add flour, baking soda and pumpkin pie spice; beat at low speed until well mixed.
Pour batter into prepared pan. Bake 18-20 minutes or until toothpick inserted in center comes out clean. Cool completely.
Combine all frosting ingredients except sprinkles in bowl. Beat at medium speed until creamy. Frost cooled bars. Decorate with sprinkles, if desired.
*Substitute 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon each ground nutmeg and cloves.
Dietary Fiber: 0g
I used one cup of dark beer instead of the water in the bar recipe. I only used 3 cups of confectioner's sugar for the frosting - and had to add a bit more liquid ( I used orange juice instead of milk) to the frosting as well. They are delicious - just the right balance of spicy and sweet!
I made these bars this morning. It looked just like the picture. The only problem was, it tasted good, but like something was missing. I looked up other recipes, and most have almost the same ingredients, but added "Salt". This ingredient is missing in this recipe. Was it omitted in error? Also...I think 4 cups of the powdered sugar is way too much. Is this an error also? I used 16 oz, which is 1 whole box.
