Gingerbread Bars With Orange Frosting

This moist gingerbread is flavored with molasses and pumpkin pie spice.

3 1/4 cups all-purpose flour
2/3 cup sugar
1/2 cup Land O Lakes® Margarine, softened
1 cup water
2/3 cup light molasses
2 teaspoons baking soda
2 teaspoons pumpkin pie spice*


4 cups powdered sugar
1/2 cup Land O Lakes® Margarine, softened
1/4 cup milk
1 teaspoon freshly grated orange zest


Red and green sprinkles, if desired


Heat oven to 350°F. Combine all gingerbread ingredients in large bowl. Beat at medium speed, scraping bowl often, until well mixed.

Pour batter into greased 15x10x1-inch jelly-roll pan. Bake for 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool completely.

Combine all frosting ingredients except sprinkles in large bowl. Beat at medium speed until creamy. Frost cooled bars. Decorate with sprinkles, if desired.


*Substitute 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon each ground nutmeg and cloves.

I used one cup of dark beer instead of the water in the bar recipe. I only used 3 cups of confectioner's sugar for the frosting - and had to add a bit more liquid ( I used orange juice instead of milk) to the frosting as well. They are delicious - just the right balance of spicy and sweet!
I made these bars this morning. It looked just like the picture. The only problem was, it tasted good, but like something was missing. I looked up other recipes, and most have almost the same ingredients, but added "Salt". This ingredient is missing in this recipe. Was it omitted in error? Also...I think 4 cups of the powdered sugar is way too much. Is this an error also? I used 16 oz, which is 1 whole box.
