Spicy Pork Tostadas
Tortillas are filled with a mixture of lean pork, spices and tomato sauce in this Southwestern recipe.

1 pound lean ground pork
1 large (1 cup) onion, finely chopped
4 teaspoons finely chopped fresh garlic
1 (8-ounce) can tomato sauce
1 teaspoon dried oregano*
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/4 teaspoon ground red pepper
12 (7 to 8) flour tortillas, warmed
3 cups finely chopped romaine lettuce
3/4 cup chopped sweet or red onion
1 small tomato, chopped
Place ground pork, onion and garlic in 10-inch skillet. Cook over medium heat, stirring occasionally, until pork is browned (9 to 11 minutes). Drain off fat.
Stir in all remaining pork ingredients except tortillas. Continue cooking until heated through (3 to 5 minutes).
Spoon pork filling onto tortillas. Serve with toppings, as desired.
*Substitute 1 tablespoon finely chopped fresh oregano leaves.
Spicy Taco Salad:
Increase romaine lettuce to 6 cups; spoon pork mixture over lettuce. Serve with toppings as desired. Serve with tortillas.
