Turkey & Mediterranean Melt
A colorful grilled cheese sandwich with great flavors.

8 slices marble rye or rye bread
4 teaspoons Dijon-style mustard
20 spinach leaves
8 ounces thinly sliced deli peppered turkey
8 strips roasted red bell pepper
bread slices with
Layer each with
bell pepper strips,
cheese and remaining bread slices. Spray sandwiches with no-stick cooking spray.
Heat 12-inch skillet over medium heat.
Place 2 sandwiches into skillet. Cook, turning once, until sandwiches are golden brown and cheese is melted (4 to 6 minutes). Repeat with remaining sandwiches.
