Chipotle Mini Burgers

Chipotle chiles heat up these cheeseburger sliders.

1/3 cup sour cream
1 teaspoon adobo sauce


1 pound lean ground beef
1 tablespoon chipotle chile peppers in adobo sauce, finely chopped
1/2 teaspoon salt
1/2 teaspoon pepper
4 (3/4-ounce) slices Land O Lakes® Deli American, cut into quarters
8 (3-inch) slider or dollar-sized buns, split
8 slices Roma tomato
4 leaf lettuce leaves, halved
4 rings red onion


Heat gas grill on medium or charcoal grill until coals are ash white.

Combine sour cream and adobo sauce in bowl; mix well. Cover; refrigerate until serving time.

Combine ground beef, chipotle peppers, salt and pepper in bowl. Shape into 8 small patties. Place onto grill. Grill, turning once, 8-10 minutes or until internal temperature reaches at least 160°F and meat is no longer pink in center. Top each burger with 2 pieces cheese; let melt slightly.

Place burgers onto bottom half of buns. Top each with 2 teaspoons sour cream mixture, 1 slice tomato, 1 lettuce leaf half, 1 red onion ring and top half of bun.

So yummy! Next time we're making regular-sized patties so we get to taste more of the spicy kick. Also really liked the "special sauce". It gave a nice balance to the burger.
