Pistachio Cream Sandwich Cookies

These are a nut lover's dream. Pistachio nuts are in both the cookie and the filling.

3/4 cup Land O Lakes® Butter, softened
3/4 cup powdered sugar
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup finely chopped pistachio nuts


1 1/4 cups powdered sugar
1/4 cup Land O Lakes® Butter, softened
1/2 teaspoon vanilla
2 tablespoons finely chopped pistachio nuts


Combine 3/4 cup butter and 3/4 cup powdered sugar in bowl. Beat on medium speed, scraping bowl often, until well mixed. Add egg; continue beating until combined. Add flour and salt; beat on low speed until well mixed. Wrap in plastic food wrap. Refrigerate at least 1 hour or until firm.

Heat oven to 350°F.

Place 1/2 cup chopped pistachio nuts in bowl. Shape dough into 1/2-inch balls. Roll each in pistachio nuts. Place 1 inch apart onto ungreased cookie sheets. Flatten each cookie with bottom of glass dipped in sugar.

Bake 7-8 minutes or until edges are lightly browned. Transfer to cooling rack. Cool completely.

Combine 1 1/4 cups powdered sugar, 1/4 cup butter, vanilla and enough half & half for desired spreading consistency in bowl. Stir in 2 tablespoons chopped pistachio nuts.

Spread bottom-side of 1 cookie with 1 teaspoon filling; top with another cookie, bottom-side down. Repeat with remaining cookies.

I have been baking these cookies for the past four Christmas seasons. Everyone absolutely loves them and I have had multiple requests for the recipe. This Christmas season I had a group of friends over for a cookie bake - this was the one cookie in my annual repertoire of treats that the whole group requested that we make. One helpful hint... Instead of spreading the filling onto the cookie, put it in a pastry bag and squirt on a dollup and then press the two cookies together to spread it to the edges. This speeds up the process, is much cleaner and makes for a more appealing appearance.
they are excellent. a co-worker made these for us last year....and they were a hit! I decided to make them this year for my family.
I made this as one of the 15 different kinds for my 2011 Holiday Cookies and thought it was a wonderful recipe. I think it would be a nice recipe for other parties where one would want party-like cookies. They were very easy to make and tasted great.

Husband loved these. They are too sweet for my taste. I think next time I will just eat the cookies by themselves instead of with the filling. The powdered sugar filling just put it over the top for me.
