Bake an easy gluten-free cake with this easy snack cake frosted with chocolate.
Heat oven to 350°F. Grease and flour 8-inch square baking pan. Set aside.
Combine flour blend, baking powder and salt in bowl. Set aside.
Combine 3/4 cup sugar and 1/2 cup butter in bowl; beat at medium speed, scraping bowl often, until creamy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Add flour mixture alternately with milk, beating at low speed after each addition.
Place 1 cup batter into bowl. Add remaining 2 tablespoons sugar, 2 tablespoons cocoa and water; stir until well mixed.
Spoon 3/4 plain batter into bottom of prepared pan. Spoon chocolate batter over plain batter. Spoon remaining plain batter on top, allowing some of chocolate batter to show through. Swirl two batters together gently with knife or spatula for marbled effect.
Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely.
Beat 1/4 cup butter in bowl at medium speed until creamy. Gradually beat in powdered sugar, 1/3 cup cocoa, vanilla and enough milk for desired spreading consistency. Frost cooled cake.

This was so simple and it was enjoyed by the kids and adults alike. I agree with a previous comment that it will take a little longer than the 25-30 minute range stated; anticipate approximately an extra 5-7 minutes more. Otherwise, an easy and delicious cake that comes together quickly. Use a good gf cocoa for richer flavor in the chocolate batter (Rodelle is excellent).
I really enjoyed this simple cake, easy to make and easier to eat! I used my own chocolate cream cheese icing that really complimented the cake. This is a nice, quick cake to whip up for company to enjoy after the entree. The kids love it too...not just us Celiacs!
Because we love the LOL recipe for chocolate chip cookies I decided to give this cake recipe a try. It was a great success. The texture is wonderful...no one would guess it is gluten free. The best part is that it is easy to make but be aware that it may take well over 30 minutes to bake.
This cake is delicious! I made it for my husband's birthday and he loved it! He can eat gluten, I have Celiac, but gluten-free is all I make now!
Thanks for your question. The gluten free flour blend used in this recipe includes xanthan gum. It is not necessary to add more of that ingredient to this recipe. Cindy -Land O'Lakes Test Kitchens

This was the best gluten free cake!!!! This was my birthday cake and everybody loved it, will be making this often.
I used Pamela's Pancake & Baking Mix (which is gluten free) as a substitute for the flour and left out the baking powder as Pamela's already includes the levening agent in her mix. This was the most awesome gf cake our family has ever experienced, and in the past 6 years we've tried a lot of gf recipes, as well as pre-packaged gf cake mixes. I am so confident of this recipe I am taking this cake in tomorrow for a co-workers birthday (and she is not gluten free).
