3 tablespoons Land O Lakes® Butter
1 large (1 cup) onion, chopped
1 medium (1 cup) green bell pepper, chopped
1 cup shredded or matchstick carrots
1 (14-ounce) package turkey kielbasa, sliced 1/4 inch, cut in half*
1 (28-ounce) can baked beans
1 (15.5-ounce) can tomato sauce
1 (14.5-ounce) can petite-diced tomatoes
1/2 teaspoon garlic powder

8 (3/4-ounce) slices Land O Lakes® Deli American
Whole grain tortilla chips
Shoestring potato sticks
Shredded or matchstick carrots

Melt butter in large saucepan until sizzling; add onion, bell pepper and carrots. Cook over medium-high heat, stirring occasionally, 4-6 minutes or until vegetables are crisply tender.

Reduce heat to medium; add kielbasa. Cook, stirring occasionally, 4-6 minutes or until kielbasa begins to brown. Stir in all remaining stew ingredients. Continue cooking, stirring occasionally, 8-10 minutes or until mixture comes to a boil. Reduce heat to low; cook 20 minutes to blend flavors.

Spoon stew into individual serving bowls. To create scarecrow faces, cut each slice of cheese with 3-inch pumpkin or round cookie cutter. Cut triangles for eyes using sharp knife. Place cheese cut-outs onto bowls of stew. Immediately place shoestring potato sticks on each side of cheese for hair; place tortilla chip on top part of cheese for hat. Create mouth of scarecrow with shredded carrots.

*Substitute hot dogs, cut into 1/4-inch slices.

Recipe Tip

- For an anytime meal, sprinkle each bowl of stew with shredded Cheddar cheese and crushed tortilla chips.

- This stew can be made ahead and frozen up to one month. Thaw in refrigerator.

Recipe Comments & Reviews

Tasty, but the canned baked beans give it a "last minute"
taste. Next time I'll try a different bean approach.
Super easy to make and the kids and adults love it! I made it for a party and everyone kept going back for more. No left overs. I would suggest doubling it since 1 pot isn't quit enough for 4 people.
This is a quick fix recipe and my husband loved this stew. I added cumin and paprika to the stew for added flavors. I will definately make this again!
this was so eay to make and both my kids and my husband loved it. it is hard to find easy meals that the whole family will eat. thanks for this one. we will have this many, many more times!!!!
