These crunchy biscotti treats are great for dipping in hot cocoa or coffee.
Heat oven to 375°F.
Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; continue beating until well mixed. Add flour, baking powder, cinnamon and salt; beat at low speed, scraping bowl often, until well mixed. Stir in peanuts.
Divide dough in half; shape each half into 13-inch log. Place 4 inches apart onto greased cookie sheet. Flatten each log to 2-inch width. Bake 24-27 minutes or until lightly browned and set. Cool on cookie sheet 1 hour.
Heat oven to 325°F. Carefully place logs onto cutting surface. Cut logs diagonally into 1/2-inch slices with serrated knife. Arrange slices, cut-side down, onto ungreased cookie sheet. Bake 18-20 minutes, turning once, or until crisp. Remove to cooling rack; cool completely.
Melt candy coating in heavy 2-quart saucepan over low heat. Dip half of each cookie into melted candy coating. Lightly shake off excess coating; place onto waxed paper. Decorate immediately before coating sets. Let stand at least 1 hour at room temperature until coating is set.
Store between sheets of waxed paper in loosely covered container.

I've been wanting to make these for a couple years now, and finally did this past weekend. Yummy, yummy and so cute. However, I did use blanched almonds instead of peanuts and added a little extra cinnamon. Easy & tasty.
Very cute, and tasty. I used chopped Walnuts, since that's what I had on hand. I never have good luck when dipping white chocolate. But it tasted good. ;-)
I made these for a work Halloween luncheon. Several people told me the "Boo Scotti" was the best thing there. No one could believe they were homemade -- everyone thought they came from a restaurant. Addictive.
First time making biscotti. It was fun. I did have some trouble with the cookie crumbling on the edges when I cut them. Very Good!
Make a double batch of these, they are fantastic and they go very quickly! They are easy to make and are delicious.
When these cute little ghosts get dunked in a cold glass of milk (or a cup of coffee) you know they're from heaven...de-lush-ous!!
so easy to make but more fun to eat

Most (okay, ALL of the time) I have an unhappy one-year-old pulling at my leg as if to say, “Mom, why is there not food on my high chair tray yet?!” So, when it comes to meals, the quicker the better.

You know the old saying, “I scream, you scream, we all scream for ice cream,” right? Well, ice cream is a favorite, but if there is any summertime sweet treat that I find to be scream-worthy , it is, hands down, the s’more. More ...
