Chewy Molasses Sandwich Cookies

These cookies are a traditional holiday favorite loaded with flavor. You can serve them as sandwich cookies or as individual cookies without filling.

Ingredients

Cookie

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup sugar
3/4 cup Land O Lakes® Butter, softened
1/4 cup molasses
1/4 cup sugar

Filling

2 1/2 cups powdered sugar
1/4 cup Land O Lakes® Butter, softened
2 tablespoons honey
1 1/2 teaspoons freshly grated orange zest

Directions

Heat oven to 350°F. Combine flour, baking soda, salt, cinnamon and nutmeg in medium bowl; set aside.

Combine 1 cup sugar and 3/4 cup butter in large bowl. Beat at medium speed until well mixed. Add egg and molasses; continue beating until well mixed. Reduce speed to low; add flour mixture. Beat until well mixed.

Place 1/4 cup sugar in small bowl. Shape dough into 3/4-inch balls; roll each in sugar. Place 2 inches apart onto ungreased cookie sheets. Bake for 5 to 7 minutes or until edges are set. (Cookies will have cracks.) Cool 1 minute on cookie sheets; remove to wire cooling rack. Cool completely.

Meanwhile, combine all filling ingredients except half and half in small bowl. Beat at low speed until well mixed. Continue beating; adding enough half and half for desired filling consistency. Spread bottom-side of 1 cookie with rounded teaspoonful filling; top with another cookie, bottom-side down. Repeat with remaining cookies.

Recipe Tip

- To make ahead, bake cookies as directed. Place unfilled cookies in containers with tight-fitting lids. Freeze up to 1 month. Prepare filling the day you are serving cookies.

- For uniform crackling on top of cookies, bake one cookie sheet at a time.

Well, I found this recipe and was excited to try it. Many years ago I had a great molasses cookie recipe and I lost it. I was hoping to make a batch and send them off to my daughter in college.I wanted this to be my "go to" cookie recipe. The recipe was quick and easy to put together. The problem came when I cooled the cookies after cooking them for 7 minutes. The edges were set so I took them out of the oven per directions. They ended up so soggy I didn't dare to send them off. I had prepared the filling as well. The filling was delicious. I'm so annoyed at how they turned out that I want to try making them again tomorrow just so I can see if cooking them longer will improve the texture. My "go to" cookies got up and went!
Every time we bake Christmas cookies, these are always the favorites among our friends. They are really chewy and the orange zest in the frosting gives them a very bright taste. I just use as much zest as I can get form two oranges, rather than trying to measure it.
I think the filling might be a little sweet, but that might be because of the honey. you could probably use less of it.
One of the best soft cookies I have made. Have had great feedback from everyone who eats a cookie and even had had individual ask for the recipe.
I added these to my Christmas tray and they went fast. Plan on baking these again real soon. They are as chewy and delicious as Archways molasses cookies. A keeper.
