Well, I found this recipe and was excited to try it. Many years ago I had a great molasses cookie recipe and I lost it. I was hoping to make a batch and send them off to my daughter in college.I wanted this to be my "go to" cookie recipe. The recipe was quick and easy to put together. The problem came when I cooled the cookies after cooking them for 7 minutes. The edges were set so I took them out of the oven per directions. They ended up so soggy I didn't dare to send them off. I had prepared the filling as well. The filling was delicious. I'm so annoyed at how they turned out that I want to try making them again tomorrow just so I can see if cooking them longer will improve the texture. My "go to" cookies got up and went!
Every time we bake Christmas cookies, these are always the favorites among our friends. They are really chewy and the orange zest in the frosting gives them a very bright taste. I just use as much zest as I can get form two oranges, rather than trying to measure it.
I think the filling might be a little sweet, but that might be because of the honey. you could probably use less of it.
One of the best soft cookies I have made. Have had great feedback from everyone who eats a cookie and even had had individual ask for the recipe.
I added these to my Christmas tray and they went fast. Plan on baking these again real soon. They are as chewy and delicious as Archways molasses cookies. A keeper.
