Ingredients

Filling

4 cups chopped cooked chicken
1 pound lean ground beef, cooked
1 (15-ounce) can black beans, drained
1 (16-ounce) can refried beans
1 medium (1 cup) green and/or red bell pepper
1 (4.5-ounce) can chopped green chiles, drained
2 medium (2 cups) tomatoes, chopped
1 small (1/2 cup) onion, chopped
1/2 cup chopped fresh cilantro
3 cups shredded Cheddar cheese
3 cups shredded Monterey Jack cheese

Tortillas

16 (8-inch) flour or corn tortillas

Toppings

Shredded lettuce
Guacamole
Salsa
Sour cream

Directions

Place each filling ingredient into an individual serving bowl.

Heat 12-inch skillet or griddle over medium heat.

Butter 1 side of each tortilla with about 1 teaspoon butter with canola oil.  Place desired ingredients onto half of unbuttered side of tortilla.  Repeat assembling quesadillas with remaining ingredients, as desired.

Place 1 quesadilla into skillet, buttered-side down.  Cook 3-4 minutes or until lightly browned and cheese begins to melt. Fold tortilla in half; press down slightly to seal.  Repeat with remaining quesadillas.

Cut into wedges. Serve with toppings as desired.
