Double Chocolate Thumbprints

Chocolate candy bar nuggets make a rich and creamy filling for these fudgy thumbprints.

Ingredients

Cookie

1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup Land O Lakes® Butter, softened
3/4 cup sugar
1 teaspoon vanilla

Filling

30 nugget-sized chocolate candy bars, cut in half

Directions

Heat oven to 325°F. Combine flour, cocoa, salt and baking powder in medium bowl; set aside.

Combine butter, sugar and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg yolk, continue beating until well mixed. Reduce speed to low; add flour mixture. Beat, scraping bowl often, until well mixed.

Shape dough into 1 inch balls. Place 2 inches apart onto ungreased cookie sheets. Make indentation in center of each cookie with thumb.

Bake for 10 to 11 minutes or until set. Remove from oven; immediately press candy piece into center of each cookie, cut-side down. Return to oven; continue baking 1 minute or until candy begins to melt. (Candy may appear to retain its shape.) Swirl melted chocolate with back of small spoon. Cool 1 minute on cookie sheets. Remove to cooling racks. Cool completely.

Recipe Tip

- Nugget-sized chocolate candy bars are individually wrapped and come in 10- to 19-ounce bags. Choose your favorite, such as milk chocolate with toffee & almonds, dark chocolate with almonds, extra milk chocolate with almonds, milk chocolate etc.

- If cookies spread too much, refrigerate dough until firm (about 30 minutes to 1 hour).

They definitely have possibilities, but the cookie base is a
little dull, needs something--maybe a little salt or a little
more sugar.
My tip: using the tip of a wooden skewer is a much neater
and easier way to spread the soft chocolate candies. Using
the back of a spoon, as recommended, makes a real mess.
I made these for my annual Christmas cookie trays. My husband loved them, but he was the only one. Other people who tried them, as well as myself, just didn't care for these. It tastes to me like the 2 chocolates just don't go together very well. While I thoroughly enjoyed other cookie recipes from Land O Lakes over the holdiays, I won't be making this particular one again.
This recipe is pretty good. The only thing that I did different was to roll the cookie dough balls in sugar before I baked. Made them less bitter. If you like the taste of cocoa these cookies are for you! Very easy though!
Cookies were delicious. I ended up with only 4 dozen but I'm sure it's because I made the cookie "balls" bigger than 1 inch. After having success the first time. I may try to adjust it and add maybe a half of cherry under the chocolate candy middle or try a different type of chocolate nugget.
