Irish Mist Brownies

This fudgy brownie is layered with mint butter cream and drizzled with chocolate.

2 (1-ounce) squares unsweetened baking chocolate
1 cup sugar
3/4 cup all-purpose flour


2 cups powdered sugar
1 (3-ounce) package cream cheese, softened
3 tablespoons Land O Lakes® Butter, softened
1/2 teaspoon peppermint extract
5 drops green food color
2 drops yellow food color


1 (1-ounce) square unsweetened baking chocolate, melted


Heat oven to 350°F.  Line 8-inch square baking pan with aluminum foil, extending foil over edges. Grease foil; set aside.

Melt 1/2 cup butter and 2 squares chocolate in 2-quart saucepan over medium heat, stirring constantly, 4-6 minutes or until smooth. Stir in all remaining brownie ingredients until well mixed. Spread into prepared pan.

Bake 25-30 minutes or until brownie just begins to pull away from sides of pan. Cool completely.

Combine all filling ingredients in bowl. Beat at medium speed until creamy. Spread over cooled bars. Drizzle with melted chocolate. Cool completely.  Lift brownies out of pan using foil ends; cut into bars.  Store, covered, in refrigerator.

Amazing and delightful all the way through
Excellent brownie.....sublime taste + so quick and easy to make. There is an abundance of frosting/filling so if you love frosting/filling, you will love these. I lined the pan with foil, overhanging the ends. When done, I just popped it out, frosted, drizzled, and easily cut them up. I'm not sure how you get 25 from the recipe however........try more like 9 - 12.
I see that the recipe here has been corrected. I was using the one in the company magazine, and it called for one cup of butter! I knew that was wrong and thankfully only used 1/2 cup. Just wanted to point that out. Yummy brownie!
I have been making these Brownies since the recipe came out, possibly for 15 years or so.

This is delightful and is requested often by family and friends.
