Banana Honey Muffins

Not your basic bran muffin--these muffins are chock full of bananas and honey.

Ingredients

1 cup bran cereal
1/4 cup Land O Lakes® Butter, melted
1/3 cup firmly packed brown sugar
2 tablespoons honey
2 medium (1 cup) ripe bananas, mashed
2 Land O Lakes® Eggs, slightly beaten
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Directions

Heat oven to 375°F.

Stir together bran cereal and half & half in bowl. Let stand 5 minutes.

Add butter, brown sugar, honey, bananas and eggs to bran cereal mixture; stir until well mixed. Stir in flour, baking powder, baking soda and salt just until moistened.

Spoon batter evenly into 12 paper-lined or greased muffin cups. Bake 20-25 minutes or until lightly browned.


Variation: Banana Honey Bread: Prepare batter as directed. Spoon batter evenly into three (5 3/4x3-inch) greased mini loaf pans. Bake at 350°F, 25-30 minutes or until lightly browned. 24 servings

These muffins are excellent! They are moist, flavorful and just plain tasty! I did substitute Agave Nectar for honey (since I was out) and it worked just as well. I did double the amount, however, as honey is typically sweeter than Agave Nectar. I also added 1/2 cup of chopped walnuts and it complimented the recipe well. Instead of making 12 muffins, the recipe was perfect for 6 jumbo muffins. I tested them at 25 minutes and decided to leave them in for an additional minute to allow them to brown a bit more. My fiance could not believe it was a bran muffin.
I don't know if I used the wrong type of bran cereal or what happened, but this recipe was a real flop. Very bland and really chewy almost rubbery texture to the bran pieces. I had to throw the entire batch in the garbage.
They are very moist and flavorful. A tasty bran muffin for a change!
