Seafood Quesadillas

The seafood filling is colorful and includes a very flavorful combination of ingredients.

Ingredients

1 (4-ounce) can medium-size shrimp, drained
1 (8-ounce) package imitation crabmeat (surimi), drained
3/4 teaspoon Old Bay seasoning
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell pepper
2 cups shredded Monterey Jack cheese
8 (8-inch) flour tortillas

Directions

Heat griddle or 10-inch skillet over medium heat. Combine shrimp, crabmeat, Old Bay seasoning, red bell pepper, green bell pepper and Monterey Jack cheese in bowl; mix well.

Spray 1 side of each tortilla with no-stick cooking spray. Spoon 1/2 cup seafood mixture onto one-half of ungreased side of each tortilla. Fold tortillas in half; press together.

Grill 3-5 minutes, turning once, or until cheese is melted and quesadillas are golden brown.

Cut each quesadilla into thirds; serve immediately.

These were very good and I'll definitely be making them again. I did make a few modifications to give it a little more flavor:
I sauted the peppers in 2tsp. vegetable oil.
I added about 1/2 tsp of garlic powder
Increased the Old Bay Seasoning to 1 1/4 tsp
Added a little bit of cheddar cheese in addition to the Monterey Jack.
Again, these are quick to make and delicious.
