Seafood Quesadillas

The seafood filling is colorful and includes a very flavorful combination of ingredients.

4-ounces frozen cooked salad shrimp, thawed
8-ounces cooked crabmeat, flaked
3/4 teaspoon Old Bay seasoning
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell pepper
2 cups shredded Monterey Jack cheese
2 tablespoons Land O Lakes® Butter, softened
8 (8-inch) flour tortillas


Heat griddle or 10-inch skillet over medium heat.

Combine shrimp, crabmeat, Old Bay seasoning, red bell pepper, green bell pepper and Monterey Jack cheese in bowl; mix well.

Spread 1 side of each tortilla with butter. Top unbuttered side of tortillas evenly with seafood mixture, placing onto one-half of tortilla. Fold tortillas in half over filling; press together.

Place tortillas into skillet; cook 5-7 minutes, turning once, or until cheese is melted and quesadillas are golden brown.

Cut each quesadilla into thirds; serve immediately.

These were very good and I'll definitely be making them again. I did make a few modifications to give it a little more flavor:
I sauted the peppers in 2tsp. vegetable oil.
I added about 1/2 tsp of garlic powder
Increased the Old Bay Seasoning to 1 1/4 tsp
Added a little bit of cheddar cheese in addition to the Monterey Jack.
Again, these are quick to make and delicious.
