The seafood filling is colorful and includes a very flavorful combination of ingredients.
Heat griddle or 10-inch skillet over medium heat.
Combine shrimp, crabmeat, Old Bay seasoning, red bell pepper, green bell pepper and Monterey Jack cheese in bowl; mix well.
Spread 1 side of each tortilla with butter. Top unbuttered side of tortillas evenly with seafood mixture, placing onto one-half of tortilla. Fold tortillas in half over filling; press together.
Place tortillas into skillet; cook 5-7 minutes, turning once, or until cheese is melted and quesadillas are golden brown.
Cut each quesadilla into thirds; serve immediately.

These were very good and I'll definitely be making them again. I did make a few modifications to give it a little more flavor:I sauted the peppers in 2tsp. vegetable oil.I added about 1/2 tsp of garlic powderIncreased the Old Bay Seasoning to 1 1/4 tspAdded a little bit of cheddar cheese in addition to the Monterey Jack.Again, these are quick to make and delicious.
