Cranberry Orange & Blueberry Biscotti

This is a delightful accompaniment to that afternoon cup of coffee.

2/3 cup sugar
1/2 cup Land O Lakes® Butter, softened
1 tablespoon freshly grated orange zest
1 1/2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup dried blueberries
1/2 cup orange-flavored sweetened dried cranberries, chopped
Coarse grain decorator sugar


Heat oven to 350°F.

Combine sugar, butter, orange zest and vanilla in bowl. Beat at medium speed until creamy. Add eggs; continue beating until well mixed.  Add flour, baking powder, baking soda and salt; beat at low speed just until mixed. Stir in blueberries and cranberries.

Turn out dough onto a lightly floured surface. Knead 10 times or until smooth.

Divide dough in half.  Shape each half into 10x3-inch log on ungreased baking sheet; flatten slightly.

Sprinkle with coarse grain sugar. Bake 25-30 minutes or until lightly browned and top is slightly cracked. Cool 20 minutes.

Cut each log diagonally into 1/2-inch slices using serrated knife. Place slices, cut-side down, onto baking sheet. Return to oven; bake 15-20 minutes, turning once, until golden brown and crisp. Place onto cooling rack. Cool completely.

I like a crunchier biscotti so I decreased the amount of butter to 1/4 cup. The combination of colors and flavors of the berries make it both eye pleasing and delicious.
