Spritz cookies are flavored with peppermint candy. Let the children join in on the fun by helping to decorate these buttery treats.
Heat oven to 400°F.
Combine all cookie ingredients except flour in bowl. Beat at medium speed until creamy. Add flour; beat at low speed, scraping bowl often, until well mixed. If dough is too soft to form cookies, cover and refrigerate about 1 hour or until firm.
Place dough into cookie press fitted with desired template; form desired shapes, 1 inch apart, onto ungreased cookie sheets. Bake 6-8 minutes or until edges are lightly browned.
Place waxed paper onto flat surface; top with cooling racks. Remove cookies to cooling racks. Cool completely.
Combine powdered sugar and enough milk for desired drizzling consistency in bowl; mix well. Drizzle over cooled cookies; sprinkle with crushed mint candies.

The cookies are delicious. There are 2 comments that I think are important to mention. First, the dough is gooey but if you take a piece of wax paper and put a large glob on it and then use the wax paper to make a log, it is then easy to insert dough into the tube. Continue with the remaining dough. The recipe says the yield is 48 cookies, I made 88 with this recipe.
It is the best cookie ever. Great if you have one of the antique Mirro Cookie Presses that are copper and aluminum from the 1950's and 60's. The pack well for travel and can be decorated many ways.
I make spritz cookies every Christmas and for weddings, baby showers, etc. This was my first time using crushed candy canes to top my spritz cookies. They were delicious. My husband especially loved them. He would have eaten them all if I'd let him!
These were so easy to make and I loved the fact that the batter did not require any refrigeration. I did not have the time to crush the peppermint on top and they still tasted great. If you like peppermint then this is the recipe for you. My DD could even do this one!
I loved this cookie....the peppermint extract really gave it a fresh taste...I will make these every year..thank you!!
