Linzer Sandwich Cookies

These tender Linzer cookies are a holiday tradition in Austria. The decorative cut-out on the top cookie allows the filling to peek through.

1 cup Land O Lakes® Butter, softened
1/2 cup powdered sugar
1 teaspoon almond flavoring*
1/4 teaspoon salt
2 cups all-purpose flour
Powdered sugar
Small decorator candies, if desired
White decorator gel, if desired
3 tablespoons seedless raspberry or apricot jam


Combine butter, 1/2 cup powdered sugar, almond flavoring and salt in bowl; beat at medium speed until creamy. Add flour; beat at low speed until well mixed.

Divide dough in half. Shape each half into a ball; flatten slightly. Wrap each in plastic food wrap; refrigerate at least 1 hour until firm.

Heat oven to 350°F.

Roll out dough on lightly floured surface, one-half at a time (keeping remaining dough refrigerated), to 1/4-inch thickness. Cut with 2-inch cookie cutters. Cut out center from half of cookies using smaller decorative cookie cutter. Place cookies, 1 inch apart, onto ungreased cookie sheets. Bake 7-9 minutes or until edges are lightly browned. Cool 1 minute on cookie sheets; remove to cooling rack. Cool completely.

Place cooled cookies with center cut-out onto waxed paper; sprinkle with powdered sugar. Decorate with small candies attached with decorator gel, if desired. Spread bottom-side of cookies without cut-out with 1/4 teaspoon jam. Top with center cut-out cookie, powdered sugar-side up.

*Substitute rum or orange flavoring.

- You can use any shape cookie cutter to make a linzer cookie. Be sure to cut 2 of the same shape for each sandwich cookie. Use a mini cookie cutter, the base of a pastry tube, or even a straw to cut center from 1 cookie to form top cookie.

- The small center cut-outs of dough can be baked at 350°F, 6-7 minutes or until lightly browned.

Loved this recipe. Working with the dough was an exercise in finding just the right temperature to roll it perfectly, but once I found that sweet spot of not-too-cool, not-too-warm, it rolled out well, cut perfectly, and tasted exactly right.f

Sorry to hear about this cookie baking experience. It is important to chill the dough but you then will need to wait some time so the dough until the dough can be rolled out. In this recipe I may need to add 1 to 2 tablespoons of flour so the dough is then not so sticky to work with. Just knead it in with your hands.
This recipe was horrible! After I chilled it it was so hard it wouldn't roll and then when I let it warm up a little, it stuck to everything. I finally got so upset from trying to get it to roll out that I gathered it all up and threw it in the garbage. What a mess and a waste of good butter, sugar and flour! UGH!

This recipe is wonderful.... I have tried other linzer recipes and they were trashed . this is very easy and the dough rolls out and bakes like a dream . Thanks so much land o lakes.
This recipe is amazing. It is easy to follow and so delicious when finished. My husband loves these cookies. It's a lot of work, rather it's time consuming, but these cookies are so worth it. Yummy!!!!
I made these cookies the other day and I must say they were delicious!! I will be making them again and again.
I baked these for my 6yr old tea party. They were a big hit, I made a couple changes to the recipe. I baked the top and bottom together, so they didn't shift on the girls while they ate them. I also used orange extract instead of almond extract, and added in grated orange peel with raspberry jam. I am making it again for her cookie exchage she is having this weekend.

I am sorry to say that this recipe turned out terribly. Had to throw out the entire batch that's a pound of butter!!!
Done properly, these are my FAVORITE Christmas cookies to add to the assortment that I give as gifts. The cookies are a great deal of work, but so worth it. That's one reason I only make them at Christmas time.
