Ingredients

Cupcakes

1 (15.25- to 16.5-Ounce) package butter recipe chocolate cake mix

Water as directed on package

1/2 cup Land O Lakes® Butter, softened

3 large Land O Lakes® Eggs

3/4 cup mini real semi-sweet chocolate chips

Frosting

3 cups powdered sugar

4 ounces cream cheese, softened

3 tablespoons Land O Lakes® Butter, softened

1 to 2 tablespoons Land O Lakes® Half & Half

Red and yellow food color  

Decorations

Black decorator gel or icing

24 small green gumdrops

Crushed chocolate wafer cookies

Green licorice strands

Decoration

Leaf-shaped gumdrops, if desired

 *Substitute orange food color.

How to make

  1. STEP 1

    Heat oven to 350°F. Place paper baking cups into 24 muffin pan cups; set aside.

  2. STEP 2

    Combine all cupcake ingredients in bowl; beat according to package directions. Fill prepared muffin cups 2/3 full. Bake 18-21 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pans. Cool completely.

  3. STEP 3

    Combine all frosting ingredients except food color in bowl. Beat at medium speed, scraping bowl often, until creamy. Tint frosting orange using red and yellow food color; beat until well mixed. Frost cooled cupcakes.

  4. STEP 4

    Make jack-o’-lantern face on each cupcake using black decorator gel; place gumdrop on top end of each cupcake.

  5. STEP 5

    Spread crushed chocolate cookies onto serving platter to create pumpkin patch. Place strands of green licorice and leaf-shaped gumdrops onto crushed cookies to make vines; lay cupcakes on their sides around vines.

Tip #1

- If crumbs are sticking to frosting, spread a very thin layer of frosting over cakes. Let stand 10 minutes or until set. Frost cakes with remaining frosting.

Tip #2

- Want variety in your pumpkin patch? Make 18 regular-size cupcakes and 12 mini-size cupcakes. Bake regular-size cupcakes 18-21 minutes and mini-size cupcakes 15-17 minutes.
