Banana bread, made with light butter, is the perfect anytime treat.
Heat oven to 350°F.
Combine all ingredients except orange juice, bananas and coconut in bowl. Beat at low speed, scraping bowl often, until well mixed.
Add orange juice and bananas. Continue beating, scraping bowl often, until well mixed. Stir in coconut.
Spread batter into greased 9x5-inch loaf pan. Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan; remove from pan to cooling rack. Cool completely.
Dietary Fiber: 2g
I added a crumb topping with slivered almonds, coconut, and fresh nutmeg- Amazing!
I've never like banana bread either, but this is the best recipe I've ever tried. My family and friends beg me to make it...it will be a regular at my house from now on. Putting it in my recipe box! Thank you Land O Lakes.
My family and I have never really loved banana bread until I made this recipe. This is by far the best banana bread recipe I've ever made. The orange zest and coconut are an excellent addition. I also added walnuts which made it even better. This will be in my recipe box as much loved recipe. Thank you, Land O Lakes.
I had a Banana Bread Bake Off and I used this recipe . To add... I topped it with a pineapple glaze_ coconut and pineapple tidbits. My family loved it!! It was moist and delish!Thanks for sharingCrazyBrazilianCook
