Honey Mashed Carrots

Carrots, mashed with light butter and cinnamon and sweetened with honey, make a comforting, yet low-fat side dish.

Ingredients

1 pound carrots, peeled, cut into 1-inch pieces
1 teaspoon salt
1 teaspoon honey
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon pepper

Directions

Place carrots and 3/4 teaspoon salt in 3-quart saucepan; add enough water to cover carrots by 2 inches. Cook over medium-high heat 7-9 minutes or until water comes to a boil.

Reduce heat to medium; cook 20-25 minutes or until carrots are tender. Drain carrots; return to pan.

Add remaining salt and all remaining ingredients; mash with potato masher until smooth.

Really liked it. Certainly tasty. Nice suprise and great alternative from potatoes (yellow/rose/sweetpotatoes). Very healthly.

It was ok, nothing special. Family didn't like, so it won't be something I'll make again

It's a nice change from potatoes. I've made it with a touch of orange juice instead of the lemon juice.
It really is good.
