Mediterranean Whole Wheat Couscous
Couscous is combined with fresh vegetables and mint to create a light, yet hearty side dish.

3/4 cup uncooked whole wheat couscous
3/4 cup reduced sodium chicken broth
2 teaspoons fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
1 medium (1 cup) cucumber, peeled, seeded, chopped
1 medium (3/4 cup) tomato, chopped
2 tablespoons Kalamata olives, quartered
1 tablespoon sliced green onions
2 teaspoons chopped fresh mint
Place couscous in medium bowl; set aside. Place chicken broth and light butter in 2-quart saucepan. Cook over medium heat until mixture comes to a boil (3 to 5 minutes); pour over couscous.
Cover with plastic food wrap; let stand 5 minutes. Uncover; fluff with fork. Add all remaining ingredients; mix well.
Serve at room temperature or chilled.
