Oven Caramel Corn

Oven-baked caramel corn, a crunchy popcorn and peanut snack, will disappear fast.

Ingredients

20 cups plain popped popcorn
1 cup dry roasted peanuts
2 cups firmly packed brown sugar
1/2 cup dark corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda

Directions

Heat oven to 250°F. Combine popcorn and peanuts in roasting pan; set aside.

Combine brown sugar, corn syrup, butter and salt in 2-quart saucepan. Cook over medium heat 8-10 minutes, stirring occasionally, until mixture comes to a full boil. Continue cooking 3-5 minutes, stirring occasionally, until candy thermometer reaches 238° F or small amount of mixture dropped into ice water forms a soft ball.

Remove from heat; stir in baking soda. Pour mixture over popcorn, stirring until all popcorn is coated. Bake 1 hour, stirring every 15 minutes, until caramel corn is crisp. Remove from pan immediately. Cool completely, stirring occasionally. Store in tightly covered container.

This was great!! I made this several times. I have even done it in the microwave instead of the oven. Just put the mixture in a brown paper bag and microwave for 2 minutes, stir, then microwave for one more minute, stirring- do this three more times for a total of 5 minutes in the microwave. Put on wax paper to cool. Fast, delicious and easy!! Great recipe!! Thanks!!
I would not change a thing.......This is better than you can get at a caramel store!!!
I've made this recipe for years, but lost my little Land O'
Lakes cookbook that the recipe was in. I was so thrilled
to find it on-line! I always make this to give to friends for
the holidays, and it always gets rave reviews! This is a
good recipe because it is not too sweet. Important note:
when baking in the oven I always use the big aluminum
foil roasters (2) to bake the corn in. You need a lot of
room to stir the mixture around so it gets nice and crispy.
