This oatmeal cookie recipe uses coconut, oats, and rice cereal for crisp and tender cookies that will be a cookie jar favorite!
Heat oven to 350°F.
Combine all ingredients except oats, rice cereal, coconut and walnuts in bowl. Beat at low speed, scraping bowl often, until well mixed. Stir in all remaining ingredients.
Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 13-16 minutes or until lightly browned.

this cookie always flatten out.how can I get them tostop these?
I do not like coconut. But i know it may also be used in the receipe for an binding agent. If it used for that, is there something else i can use to bind it with? Or is it okay to just skip it completly?

Definitely a keeper and make again recipe! I did add chocolate chips, splitting the 3 cup total with the rice cereal, coconut and oatmeal.Very good!
I thought it would be too sweet when I was adding the sugars, but it's actually not. Halfway through, I added about 1C of chocolate chips to the rest of the batch, and the rest of the fam likes them better.
Very good cookie, needs a little more flavor
This will be my 4th Christmas to make this cookie. It is my favorite and requested every year since I started making them. I like that it makes a lot from one batch. I give them as gifts to friends and family wrapped up in pretty packages. They do last a while if you don't eat them up to fast.
My daughter phoned me from Ontario Canada to tell me about this recipe. Made them immediately. They were excellent. I love crispie cookies. These fit the bill! They weren't overly sweet and were devoured in 2 days. A definite must!
Wonderful, but addicting cookies (one is never enough) They bake up nicely and hold up well. I bake a batch and take them camping. They're still good at the end of the week, but only if I keep them hidden. Kind of a pain to mix, but worth it !
