This buttery pound cake, filled with candied fruit, is especially nice during the holiday season.
Heat oven to 350°F. Grease and flour 6 mini (5 3/4x3-inch) loaf pans; set aside.
1 1/4 cups flour and all remaining ingredients except
candied fruit and walnuts in bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in remaining 1 cup flour, candied fruit and nuts.
Divide evenly among prepared pans. Bake 45-55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans.
Dietary Fiber: 0g
Instead of candied fruit, I used remnants of various homemade preserves, peach, plum and pear. I also substituted pecans for walnuts. Awesome!
I use only the candied cherries and candied pineapple in this cake with the walnuts. I also make a version where I add chopped dates and cut-up orange slice candies, tossed in sugar, and walnuts. This is a must requested recipe and the date/orange cake is really amazing. I've been making this since it was first published, as Evangeline posted.
Actually, I would give this recipe 10 stars! I've made this cake for the past 15 or so years since the recipe was first published in an LOL digest-sized cookbook. This cake literally melts in your mouth! The idea to add cream cheese was a real stroke of genius! As pecans are preferred in my part of the country, I substitute them for walnuts. To make an otherwise delectable cake irresistible, I also add coconut. People ask me every Christmas to make them some of this fruitcake. It is, indeed, THAT good. :)
Everyone that I gave this Fruit Cake to, wanted more. My husband likes traditional fruitcake, but doesn't want it any more, only this recipe.
I used mixed candied fruit and nuts in this recipe it is great to gave for the holidays.
