Tomatoes 'n Butter Stuffing

Serve this quick and easy garden fresh side dish with grilled chicken or pork.

1/2 cup green bell pepper strips, sliced 1x1/4-inch
1/4 cup chopped onion
2 teaspoons finely chopped fresh basil leaves*
1 cup herb-seasoned stuffing mix
4 medium tomatoes, cored, seeded, each cut into 8 wedges


Melt butter in 10-inch skillet until sizzling; add green pepper, onion and basil. Cook over medium heat until green pepper is crisply tender (3 to 4 minutes). Stir in stuffing and tomatoes.

Cover; continue cooking until tomatoes are firm but heated through (2 to 3 minutes). Serve immediately.

*Substitute 1 teaspoon dried basil leaves.

Recipe Tip

To core and seed tomatoes, cut tomatoes into quarters; remove core, seeds and liquid surrounding seeds.

This is very tasty and I will make it many more times in the future, it reheats well and tastes great .
I also add some diagonally sliced celery. So good.
I made this recipe years ago.....It is scrumptious!!! So happy to find it again. When you can use "fresh from the garden" tomatoes, you are in for an "over the top" taste experience!
My Mom made this many years ago. She passed away 11 years ago, but I've loved this for so long, I had found the recipe way back when, and couldn't find it, then found it here, this recipe is to die for, even better reheated, I could make a meal of this, one of the best recipe's I've ever had.
