Cherry Date Sparkle Bars

This sinfully rich filling of dates, cherries and pecans tops a pie like crust for an irresistible bar.

Crumb Mixture

1 cup all-purpose flour
1/2 cup LAND O LAKES® Butter, softened
1/4 cup sugar


3/4 cup sugar
1/2 cup all-purpose flour
2 eggs
1 1/2 teaspoons vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped dates
1/2 cup sweetened flaked coconut
1/2 cup chopped pecans
1/2 cup halved maraschino cherries, drained


Heat oven to 350°F. Combine all crumb mixture ingredients in small bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press crumb mixture onto bottom of 8-inch square baking pan. Bake for 15 to 20 minutes or until edges are lightly browned.

Meanwhile, combine 3/4 cup sugar, 1/2 cup flour, eggs, vanilla, baking powder and salt in same bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in all remaining ingredients by hand.

Pour mixture over hot, partially baked crust. Continue baking for 25 to 30 minutes or until lightly browned and set. Cool completely; cut into bars. Store refrigerated..

Made this recipe several times many years ago. Took it to several Christmas office parties and they always disappeared INSTANTLY. Probably my favorite "cookie" recipe. Christmas gifts to some of the kids this year.
This festive bar has been a holiday favorite of mine for many years.
