Instant pudding mix helps make moist, chewy bar cookies easily.
Heat oven to 350°F. Grease 8-inch square baking pan; set aside.
Combine brown sugar and 1/2 cup butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; mix well. Add flour, oats and pudding mix; beat at low speed until well mixed.
Spread mixture into prepared pan. Bake 23-27 minutes or until toothpick inserted in center comes out clean. Cool completely.
Combine powdered sugar and 3 tablespoons butter in bowl. Beat at medium speed until well mixed. Add enough milk for desired spreading consistency. Spread frosting over cooled bars; sprinkle with coconut.

These bars were good, but lacking in coconut flavor. The coconut pudding mix makes the bars moist, but doesn't add much coconut flavor. I would recommend adding a 1/2 cup shredded coconut, plus 1/2 tsp- 3/4 tsp coconut extract to the bar for a more pronounced flavor. A splash of vanilla or coconut extract in the frosting would be yummy too!
I really liked these bars. I LOVE coconut though so I added a half cup to the bars also and it turned out great.
This recipe makes an easy, frequently requested, delicious dessert! I was making these for a special event and I cut them in long thin diamond shapes. They were very elegant arranged on the platter and people raved about them and asked for the recipe.
This is a delicious dessert for anyone who likes coconut.

This year, my grandson Clark is 3 years old, so I wanted to make some cookies that he would love to eat and would find to be fun, too. These adorable Powdered Sugar Snowmen Cookies are just the ticket.
Chocolate’s complex flavor brings out the sweetness and tanginess of fruit, mellows the heat of peppers, and comes alive when introduced to a little bit of salt. The real question should be, “What can’t you dip in chocolate?” More ...
