Polish Potato Cheese Soup

This hearty potato soup recipe is perfect for a quick weeknight meal.

2 tablespoons Land O Lakes® Butter
2 large (1 1/2 cups) onions, chopped
3 tablespoons all-purpose flour
4 cups milk
3 medium (3 cups) potatoes, cubed 1/2-inch
1/4 teaspoon pepper
2 cups shredded Cheddar cheese
8 ounces (about 2 links) cooked Polish sausage, cut into 1/4-inch slices
Salt, if desired


Melt butter in 4-quart saucepan until sizzling; add onions. Cook over medium heat, stirring occasionally, 4-5 minutes or until softened. Stir in flour; continue cooking 1 minute. Stir in milk, potatoes and pepper. Continue cooking, stirring constantly, 3-5 minutes or until mixture comes to a boil.

Cover; reduce heat to medium-low. Cook 22-28 minutes or until potatoes are fork tender. Stir in cheese and sausage. Continue cooking, stirring occasionally, 3-4 minutes or until cheese is melted and soup is heated through. Salt to taste.

Recipe Tip

Yukon gold or new red potatoes work best for this soup. They hold their shape and have a nice tender bite after cooking. Baking potatoes like russets can bread down and create a mealy texture.

Yummy, the family loved it! I did tweak the recipe as just can't help myself. I made a large batch with 4 cups milk and 4 cups chicken stock, 2 bay leaves, leeks instead of onions and 1 teaspoon of caraway seeds, mmmmmm
I swapped two cups of milk for chicken stock so only two cups of milk. If you do that I recommend skipping the salt as it's too much with the sausage and chicken stock. We had it with baking powder biscuits. Hubby and I love it!
My family's fav. Put in bread bowls, and you've got one hell of a meal. Great to double for guests.
I made this following the recipe exactly, which I never do. When I added the cheese and sausage in the whole thing curdled and was so nasty we couldn't even eat it! So disappointed because it was looking perfect up to that point! Guess I'll stick to my own "recipes" from now on.
I make this all the time. I sub. chicken stock for the milk though. It gives it WAY more flavor. I also add some velveeta, minced garlic, and some hot sauce. This is one of my favortie meals hands down!
I have made this numerous times and we love it! I use turkey Kielbasa for myself and for my huband I use linguica this way we are both happy. I do cook the meat before hand and add as much or as little as I want to each bowl. We love the onions so if anything we add more. I also substitute low fat cheese and milk. This is a great cold winter night recipe that I have passed on to friends who have even used bratwurst

I added 1 chopped celery stock and 1 chopped carrot along with 1/2 onion, and then omitted the sausage. Served with fresh garlic bread and fresh green salad. Very creaming soup, best soup I had in a long time and I will definitely make it again.
Comfort food for a cold winters night. a loaf of rustic bread and we were in heaven. Just wish I could do something to reduce the sodium level of the soup. Otherwise utterly delicious!
It was very easy to make and I liked the overall flavor. However, the polish sausage was a little greasier than I might have liked. I also would cut the pieces into quarters as well as sliced to make it easier to eat.
I didn't put any sausage in it, added a little shredded carot and some celery. It was a big hit with the family and has been
requested many times.
I made it without the Polish sausage as I didn't have any. My husband, who never comments on anything I make, actually said "this is quite good"! Daughter, fussy eater, loved it as well.
Very hearty with a loaf of crusty bread. yummy. Looking for a way to cut down on the sodium.
I thickened this soup with cornstarch so it was gluten free. I used 1 and 1/2 tablespoons of cornstarch in place of the flour.
I doubled the recipe, and everyone loved it, even the kids!
I made a double batch of this soup yesterday and my husband loved it. Usually, he doesn't like soup so I know if he loved it then it is great. I added chopped carrots and celery and some dill weed to enhance the flavors. Great recipe for a cold winter day. Definitely a keeper.
The onion overwhelms every other flavor and I only happened to have 1 1/2 onions on hand.

I'll make it again with maybe 1/2 cup of finely chopped onion maximum if any, otherwise you miss all the other flavors. I'll also double the polish sausage because we love it.
this is really a quick soup to make after work. I did add a little chopped celery with the onion. I have also added packaged diced ham and some extra cheese. It is an easy recipe to alter to your own test.
This was a very hearty soup and very favorful. I added shredded carrot and chopped celery. It's, definitely, a keeper.
We have made this a couple dozen times at least. Especially come winter time! This is very easy and quick to make. Very hearty!
