Make this quick and easy broccoli cheese soup for dinner tonight!
Place chicken broth and broccoli in 2-quart saucepan. Cook over medium-high heat 8-10 minutes or until mixture comes to a boil. Reduce heat to medium. Cook 4-6 minutes or until broccoli is tender.
Stir together half & half and flour in bowl until smooth. Slowly add flour mixture to soup, stirring constantly. Continue cooking, stirring occasionally, 2-3 minutes or until mixture comes to a full boil. Boil 1 minute. Reduce heat to low. Stir in cheese until melted.
Dietary Fiber: 2g
seriously so good, I made it two days in a row because it was just so good and moreish. My new favourite soup. I used a mild chedder cheese and a slice of american cheese, used onion salt instead of regular.
Really good and simple to make! Also, as a bonus, the cheese part of this recipe makes for a really good sauce for baked potatoes!

Yummylicious!!!! So good! It reminded me of the broc/cheese soup that I loved at Pizzaria Uno's from "back in the day". Added some pepper for a nice little kick and it was OHHH SOOO yummy! Next time I will add some sharp cheddar for extra flavor, although it was delicious just the way it is instructed above.
I have searched for years for a deliciously yummy broccoli and cheese soup recipe that is not too thick or too cheesy (if there is such a thing) and I can happily say THIS. IS. THE. ONE!!!!!!! I love this recipe (hence my rating of 5 stars!!) It's easy and very delicious. I made it for the first time this weekend in preparing for a fall party. I tripled the recipe to fit into my 5 qt. crockpot and let me tell you there wasn't much left to bring home. It was a definite hit of the party! Although it's not a crockpot recipe, I cooked it on the stove as directed and then transferred it to my crockpot and put it on the "Keep Warm" setting. Delicious!!! You're going to want to try this one. It's a keeper.
love this soup, my boys 7 and 9 after tasting the soup didn't want anything else but the soup, they said they were saving room in their tummy just for the soup, I'm having it for lunch tomorrow thanks
I made this soup last night when I got home from work. It was delicious. I like the fact that it is not too thick. You can use 2% less fat cheese. I did saute some minced shallot and 1 clove garlic which I added to the pot for flavor. Also sprinkled some sweet smoked paprika on top before serving. You should add salt & pepper to taste which also gives it good flavor. I don't like broccoli stems so I used only floret, which I happened to have in the freezer. I par-cooked them first and then added to hot stock. Very easy and very good recipe!
I made this soup and my "picky" husband loved it. I have tried several other variations of broccoli soup and finally found a keeper. I did cut the cheese down to 3ozs. of american cheese and prefer it that way. It is definitely a keeper.
very easy recipe! I added a little sharp cheddar. I also did 3/4 cup skim milk and 1/4 cup LOL fat free half and half to make it richer. yum!

What a great recipe. It was quick and easy and so flavorful. I substituted fresh broccoli and also organic vegetable broth to make it a vegetarian dish. It was wonderful!
OMG, This is a great flavorfull soup I used organic chicken broth,and served it with carlic bread it came out perfect. Thanks to Land O Lakes for this one!
My family loved this soup! I doubled the recipe the first time and will have to make an even larger batch the next time I make it! It was easy to make - a great after work (oops!, didn't plan anything for dinner) quick meal.
This recipe is simple and easy to prepare. Low in calories and filling. Great on a cool fall evening. I did substitute fresh broccoli for the frozen.I grated the cheese and saved a small portion to use as garnish when I served it. Can't wait to serve it again.
