Country Pasta With Mozzarella

A hearty home-style pasta filled with bacon, broccoli and Mozzarella cheese.

Ingredients

8 ounces (3 cups) uncooked dried rigatoni
8 slices bacon, cut into 1-inch pieces
2 cups broccoli florets
1/2 teaspoon finely chopped fresh garlic
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/8 teaspoon ground red pepper
1/4 cup chopped fresh parsley

Directions

Cook rigatoni according to package directions. Drain; set aside.

Meanwhile, cook bacon in 10-inch skillet over medium-high heat, stirring occasionally, 6-8 minutes or until bacon is crisp. Reduce heat to medium. Add broccoli and garlic. Cook, stirring occasionally, 4-5 minutes or until broccoli is crisply tender.

Add cooked rigatoni, mozzarella cheese, Parmesan cheese and ground red pepper. Continue cooking, stirring occasionally, 3-5 minutes or until cheese is melted. Sprinkle with parsley.

This is easy and very good!!!
My family loves this meal-we sometimes vary it by adding cooked chicken with it. Very easy to make-nice and quick!
Quick, easy and cheesy. This is an excellent choice for a last minute dinner party because you probably have all the ingredients handy. The broccoli and bacon are mellowed by the creamy addition of mozzarella and parmesan cheese. All you need is a salad and garlic bread.
