Lemon Sole & Carrot Bundles

Fish fillets are rolled and stuffed with sweet, tender carrots and topped with the country goodness of herb stuffing.

Ingredients

4 medium carrots, cut into 5x1/4-inch strips
Water
1 1/2 cups crumbly style herb seasoned stuffing
1/3 cup LAND O LAKES® Butter, melted
2 tablespoons lemon juice
1 pound fresh or frozen sole fillets, thawed, drained

Directions

Heat oven to 375°F. In 2-quart saucepan place carrots; add enough water to cover. Bring to a full boil. Cook over medium heat until carrots are crisply tender (6 to 8 minutes).

Meanwhile, in small bowl stir together stuffing, butter and lemon juice; set aside.

Divide carrots equally among fillets; wrap each fillet around carrots. Place fillets, seam-side down, in 9-inch square baking pan. Sprinkle with stuffing mixture. Cover; bake 10 minutes.

Uncover; continue baking for 8 to 10 minutes or until fish flakes with a fork. Season to taste with salt and pepper.

MICROWAVE DIRECTIONS: In 2-quart bowl combine carrots and 1/4 cup water. Cover; microwave on HIGH, stirring after half the time, until crisply tender (5 to 6 minutes). Meanwhile, in small bowl stir together all remaining ingredients except fish; set aside. Divide carrots equally among fillets; wrap each fillet around carrots. Place fillets, seam-side down, in 1 1/2-quart casserole. Sprinkle with stuffing mixture. Microwave on HIGH until fish flakes with a fork (7 to 9 minutes). Season to taste with salt and pepper.
