Honey Glazed Citrus Salad

A refreshing combination of honey dressing, greens and citrus fruits are the special ingredients in this salad recipe.

1/2 cup sliced or slivered almonds
1 tablespoon sugar


2 tablespoons vegetable oil
2 tablespoons cider vinegar
2 tablespoons honey
4 cups torn lettuce
1/2 cup chopped red onion
1/4 cup chopped fresh parsley
2 oranges, peeled, sectioned, drained
2 grapefruits, peeled, sectioned, drained


Place almonds, butter and sugar in 8-inch nonstick skillet. Cook, stirring constantly, over medium-low heat until almonds are golden and caramelized. Immediately remove from heat; spread onto waxed paper to cool.

Stir together oil, vinegar and honey in bowl. Add all remaining ingredients except almonds; toss to coat.  Sprinkle almonds over salad.

Recipe Tip

You can peel, section and drain the oranges and grapefruit ahead of time and store in the refrigerator. There are great tips and photos for how to peel and section citrus fruits on the Internet. Just search for "How to Peel and Section a Grapefruit or Orange."

Very light, sweet salad that is a great side for any meal. Would be great along side a spicy dish, oriental stir fry, sandwich or even a soup. WILL have this one again !!
