Pear Upside-Down Snack Cake
This pear-topped spiced gingerbread snack cake makes a great fall dessert.

Ingredients
Pear Base
2 tablespoons Land O Lakes® Butter

3 cup firmly packed brown sugar2 medium pears, peeled, cored, thinly sliced
Cake

3 cup firmly packed brown sugar1 Land O Lakes® Butter, softened
4 cup3
4 cup all-purpose flour1 teaspoon ground cinnamon
1
2 teaspoon ground ginger1
2 teaspoon baking powder1
4 teaspoon baking soda1
4 teaspoon salt 3 cup buttermilk1 tablespoon mild molasses
Topping
1 Land O Lakes® Heavy Whipping Cream
2 cup1 tablespoon powdered sugar

4 teaspoon ground cinnamon*Substitute 1 teaspoon vinegar or lemon juice and enough milk to equal 1/3 cup; let stand 5 minutes.
How to make

STEP 1
Heat oven to 350°F.

Place 2 tablespoons butter and 1/3 cup brown sugar in bowl. Microwave 20-30 seconds until butter is melted. Spread mixture into bottom of 9-inch round cake pan. Arrange pear slices over brown sugar mixture, overlapping slightly, if necessary.

Combine 1/3 cup brown sugar, 1/4 cup butter and egg in bowl. Beat at medium speed until creamy. Add flour, 1 teaspoon cinnamon, ginger, baking powder, baking soda and salt. Beat at low speed until mixed. Add buttermilk and molasses; continue beating until well mixed. Spread batter over pears.

Bake 21-25 minutes or until toothpick inserted in center comes out clean. Loosen cake by running knife around edges. Cool 5 minutes in pan. Place serving platter upside-down over pan; turn over so cake comes out upside down onto platter.

Combine all topping ingredients in bowl. Beat at high speed until stiff peaks form. Dollop topping mixture onto each cake wedge.
Tip #1
Choose firm but ripe pears for this dessert. Pears are picked green. To ripen at home, place them into a brown paper bag and let them sit at room temperature for a couple days, or until they are slightly soft.
