1 tablespoon prepared horseradish
2 teaspoons lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
12 small (1 1/2 pounds) new red potatoes, unpeeled except for 1/2-inch strip around center of each potato
1 small lemon, cut into 6 (1/4-inch) slices, halved
2 tablespoons chopped fresh parsley
Microwave butter in 2-quart casserole 50-60 seconds or until melted. Stir in horseradish, lemon juice, salt and pepper. Stir in potatoes until well coated with butter. Cover; microwave, stirring after half the time, 10-12 minutes or until potatoes are fork tender. Let stand 5 minutes. Garnish with lemon slices and sprinkle with parsley.
