Cardamom Spiced Nuts

The delicate flavor of cardamom blends with caramelized sugar to enhance the flavor of this nut assortment.

Ingredients

1 cup salted cashews
1 cup salted peanuts
1 cup pecan halves
1/2 cup sugar
3 tablespoons sugar
1 teaspoon ground cardamom

Directions

Melt butter in 10-inch skillet; stir in nuts and 1/2 cup sugar. Cook over medium heat, stirring occasionally, until sugar is melted and nuts are browned and caramelized (8 to 12 minutes).

Meanwhile, combine 3 tablespoons sugar and cardamom in large bowl. Stir in hot caramelized nuts; toss to coat. Spread on waxed paper; cool completely. Break into clusters. Store in tightly covered container.

Microwave Directions: Melt butter in 9-inch square baking dish on HIGH (50 to 60 seconds). Stir in nuts and 1/2 cup sugar. Microwave on HIGH, stirring every 2 minutes, until sugar is melted and nuts are browned and caramelized (10 to 12 minutes). Meanwhile, combine 3 tablespoons sugar and cardamom in large bowl. Stir in hot caramelized nuts; toss to coat. Spread on waxed paper; cool completely. Break into clusters. Store in tightly covered container.

This recipe is a keeper. The best sweet/nut mixture i've ever had; everytime I've brought it anywhere there are many requests for the recipe.
Easy to make. I cook the nuts for the entire 12 minutes, preferring more toasted flavor.
