Cappuccino Chocolate Chip Cookies

These cappuccino cookies use coffee and cinnamon to add pizzazz to old-fashioned chocolate chip cookies.

2 teaspoons instant coffee granules
1 tablespoon coffee-flavored liqueur*
1 cup firmly packed brown sugar
1 cup Land O Lakes® Butter, softened
1/2 cup sugar
1 (1-ounce) square semi-sweet baking chocolate, melted, cooled
1 teaspoon vanilla
2 2/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 (12-ounce) package real semi-sweet chocolate chips


3 ounces white baking bar
2 teaspoons shortening


Heat oven to 375°F.

Dissolve coffee granules in liqueur in bowl; set aside.

Combine brown sugar, butter and sugar in another bowl. Beat at medium speed, scraping bowl often, until well mixed. Add coffee mixture, chocolate, eggs and vanilla; continue beating until well mixed. Add flour, baking soda, cinnamon and salt; beat at low speed until well mixed. Stir in chocolate chips.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake 8-10 minutes or until golden brown. Cool completely.

Melt white baking bar and shortening in 1-quart saucepan over low heat, stirring occasionally, until smooth. Drizzle over cooled cookies.

*Substitute 1 tablespoon milk.

I have been making these only at Christmas for several years. DH still enjoys the regular chocolate chip cookies I make through the year-but he always says-"You know, these are good-but I really like those coffee ones you make at Christmas".
From the Test Kitchen... Mike, the butter in the recipe should be softened and not melted or even very soft. If the butter is too soft the cookies when baked will be very flat. So, my suggestion is to chill the cookie dough covered in the refrigerator about 30 minutes before you form the cookie dough and bake the cookies. The butter in the dough will firm up if it is too soft and the cookies will not end up flat. Another suggestion is to add 1 to 2 tablespoons of flour to the dough to help firm it up. To understand if the cookies will be flat when baked - just bake 1 or 2 to start with and then you will know whether to chill the dough and/or add some flour to the dough.
I followed the directions exactly and the cookies came out as flat as pancakes! Most of the cookies broke apart while removing them from the cookie sheets. Is this list of ingredients correct??? Could there be too much shortening (butter) in the recipe?
I live at 5500 ft and these turned out so good. I will make these again often! Great recipe. The combo of chocolate, cinnamon, and coffee is just right.
I've been looking for a recipe like this for a while now. So far the warm cookies out of the oven are delicious. I can't wait to try one with the white drizzle on it.
